The History
The Filippi family has been in Soave since the 1300's and making wine since the early 1900's, working with the highest altitude vines in the area. The vineyard is secluded, hiding in and amongst forests of oak and chestnut trees, which creates beautiful, well ventilated microclimates for the vineyards. Filippo Filippi is the current caretaker of this land, and the one who has shepherded the winemaking towards a natural, organic process.
The Philosophy
Cantina Filippi believes that winemaking should happen without force; that respecting the natural time that each process takes is how to create stunning wines. Gravity fed vats, and a cellar with thick stone walls are both examples of how Filippo doesn't believe in forcing the wines, as well as the time the wines spend aging - sometimes up to many years on lees before they are ready.
