Key modern traditionalist

The story begins in Mukhrani Valley, one of Georgia’s oldest viticultural zones. Here, Iago Bitarishvili works with Chinuri, a native grape variety deeply rooted in the region’s identity, crafting wines that reflect Georgia’s 8000 year-old winemaking tradition.


Iago is part of a small group of producers who helped bring traditional qvevri winemaking back into focus in the modern era, and redefined Georgian wine on the global stage.

Fresher qvevri styles with less extraction

Everything begins with the vineyard. Farming is organic, with meticulous manual work and a focus on maintaining balance within small, family-held parcels.


Grapes are hand harvested and fermented with indigenous yeasts in traditional buried qvevri. Unlike many Kakheti styles, Iago’s approach in Kartli emphasizes shorter skin contact, resulting in wines that are textural, lifted, with fine tannin and vibrant acidity.


The wines are typically aged in qvevri before being bottled without filtration and with minimal sulfur, allowing the expression of Chinuri to remain transparent and precise.


Iago’s wines are often cited for their energy and depth, offering a more restrained and mineral interpretation of Georgian qvevri winemaking.
