The History

Laura Brennan Bissel did not go to school for winemaking. Her earliest introductions to wine were the bottle she stole from her parents or from the hotel she worked at in high school. In her mid 20s she lived in Barcelona for a time where she developed her taste for and love of simple food and low-intervention wines.


In 2011 she moved back to California and with a few resumé embellishments landed a winemaking internship in Dry Creek Valley. She made her first vintage the following year – a learner by doing (and making her own mistakes). In 2013, hoping to learn more about viticulture she interned with Matthiasson which turned out to be an invaluable experience.


The Philosophy

Inconnu’s methodology in the winery can be described as minimal or low-interventionist. All fruit is ethically farmed (most vineyards are certified Organic) and ferments are carried out with wild yeasts. She avoids filtration and additions of sulphur whenever she can, though she remains steadfast against dogma, in the cellar or in life.
