The History
After managing the family estate - Domaine Chandon de Briailles with his sister Claude, François de Nicolay began a tiny negotiant project in 2000 with the aim of producing as pure an expression of Burgundy as possible.
The Philosophy
Maison Francois de Nicolay purchases only organic and biodynamic fruit from close friends from Chablis to the Côte-de-Beaune and vinifies in their cellar in Savigny-les-Beaune without the use of selected yeasts, new oak, pumpovers or filtration of any kind.
