The History
Casa Belfi is a collaboration between Albino Armani and winemaker Maurizio Donadi in San Polo di Piave (Treviso). Revisiting ancient production methods and biodynamic farming practices that boost microbial health in vineyards. The Casa Belfi vineyards are farmed Biodynamically and are certified organic and biodynamic by Suolo e Salute and Demeter.
The Philosophy
The wines are made in an ancient method called Col Fondo ("with the bottom") meaning that there is sediment and/or lees present in the bottle, spurring a re-fermentation and adding depth and complexity to the wine. Youβll find their wines slightly less sparkling than other Proseccos as well which are made in completely different way. These are old school Italian Pet-Nats.
