About Okamura Honke:
Founded in 1854 in Shiga Prefecture, Okamura Honke is a family run brewery located in Toyosato, an area known for quality rice cultivation and soft groundwater from the Suzuka Mountains.
The brewery works primarily with local rice varieties including Tamaei, Yamada Nishiki, and Ginfubuki. Production remains highly traditional, including hand washing of rice, small scale kōji making, and multi stage fermentation. Some cuvées are pressed using the labour intensive fukuro shibori method to preserve texture and aromatic detail.
