Style: junmai, kimoto, muroka, and shizenshu

Katori 90 is made using organically grown rice polished to 90%, meaning only 10% of the outer layer has been removed. Produced using the traditional kimoto method, spontaneous fermentation, and without filtration, the sake retains its natural colour, texture, and rice character.

The minimal polishing contributes pronounced rice bran notes and elevated lactic acidity. Suitable for serving across a wide range of temperatures.

About Terada Honke
Founded around 1675, Terada Honke is known for its traditional approach to sake production. The brewery does not use cultivated yeast, relying instead on naturally occurring yeast present within the brewery environment. All sake are produced using the kimoto method, with no added lactic acid in the starter culture.

The brewery emphasizes manual production methods and uses organically grown rice throughout its range.
