Bone-dry cloudy sake! This is where rice becomes part of the drinking experience. Akishika Shuzō farms much of its own organic rice in Osaka, maintaining unusually close control over its sake from the rice field through brewing.
Akishika’s Aragoshi Nigori is thick, textured and almost snowy with rice, but beneath its milky appearance is a sake with serious acidity and a distinctly dry finish.
Aragoshi means roughly or coarsely pressed. Rather than filtering the sake until clear, Akishika leaves a substantial amount of rice sediment in the bottle, giving it a dense, rustic texture you can see and feel. It is also nama, meaning it is bottled without pasteurization.
Very rice-forward, with tart green apple and grapefruit, gentle sweetness and a touch of tanginess. The texture is rich and chewy, with bright acidity and a crisp, bone-dry finish.
Serve well chilled. Gently turn the bottle to incorporate the settled rice before opening, and keep refrigerated.
