Monte Tabor Amarone is crafted from organically farmed estate vineyards using the traditional appassimento method. Fidora is one of Italy’s oldest organic wineries, certified since 1974, and their Amarone reflects a deep commitment to biodiversity, low intervention farming and purity of fruit.
Corvina, Corvinone, and Rondinella are hand harvested and naturally dried in well ventilated rooms for several months, concentrating flavour, sugar and structure. After gentle crushing, the wine ferments slowly with native yeasts, followed by long ageing in large Slavonian oak and French oak to build complexity, polish and aromatic depth. The 2015 vintage shows the richness and refinement that long, even ripening conditions bring to Corvina based Amarone.
Tasting note
Rich, layered and elegant with notes of black cherry, dried fig, cocoa, sweet spice and warm earth. The palate is full bodied and velvety with ripe tannins, a long dried fruit finish.
