2023 Domaine de L'Ecu Cuvée Classic

Classic is crafted from 100% Melon de Bourgogne grown on 4.5 hectares of 30 to 35 year old vines. The slopes face west and north west, and the soils are siliceous with a metamorphic subsoil, giving the wine its great tension.

The estate has been organically farmed since 1975 and biodynamic with Demeter certification since 1998. Vineyard work includes soil ploughing, soil scraping and careful canopy management. Pruning is simple Guyot.

Grapes are hand picked and received by gravity with no pumps used. After pneumatic pressing, fermentation proceeds with 100% native yeast. The wine is aged on its lees in underground vats lined with glass tiles. It is bottled with no fining and no filtration.

Tasting note: Crystal clear and straw yellow. Aromas of lime, grapefruit, pear, apple, white fruit and salty citrus. The palate is rich yet straight, carried by bright acidity with lime and subtle marine notes contributing freshness and length. Best enjoyed young for its fruit purity.
