Hirsute is a bright, textural white from France's Sud-Ouest. The blend brings together Chenin Blanc, Sauvignon Blanc and Semillon, sourced from limestone clay parcels that naturally preserve acidity while adding mineral drive and gentle weight.
Grapes are hand harvested and fermented with native yeasts at cool temperatures to retain aromatics. Each variety is vinified separately, then aged on fine lees in stainless steel to build mid palate texture without masking freshness. Sulphur is kept low in keeping with the project’s low intervention philosophy.
Tasting note
Fresh and lively with notes of citrus, green apple, pear skin, white flowers and a subtle herbal lift. The palate is crisp and mineral with gentle lees roundness, bright acidity and a clean, refreshing finish.
