Minus 220 marks the winery’s first venture into producing a wine with zero additions, including sulphur. Created for Budburst 2016, New Zealand’s inaugural natural wine and food fair, this wine was designed to showcase the "gold standard" of natural winemaking. It originated as an experiment with a portion of the 2016 Green Glow and yielded such outstanding results that production increased to two barrels in 2017.

This wine was barrel-fermented in neutral oak, aged on its lees for six months, and bottled without filtration or fining. The process is entirely artisanal: grapes are hand-picked, the wine is hand-stirred, manually bottled, and sealed with natural beeswax sourced from Arataki, a local honey producer. Each bottle is hand-corked and labelled, reflecting the hands-on philosophy behind the wine.

In the glass, Minus 220 displays a golden yellow hue. The nose offers aromas of fresh straw, dehydrated pineapple, and spicy apricot. On the palate, rich flavours of caramel, pineapple, and citrus shine, supported by grapefruit pith phenolics and crisp acidity that give the wine a balanced, lingering finish.
