what Saké tasted like over a hundred years ago - think ‘liquid rice’ in a bottle! Polished only down to 90% (remaining) leaving a majority of the grain intact including its fats, proteins and enzymes; providing the raw ingredients for a robust and full-flavoured drink.
Terada Honke Daigo no Shizuku: This Daigo no Shizuku is a very unique Sake. It is produced using the Bodaimoto method, which is known as a ‘pre-modern’ method of creating sake, first originating from a temple in Nara. The resultant sake is wildly different from many, with a full body showing sweet fruit and a pickled ume & citrus character. It’s acidity is lively and at only 11% alcohol this is wildly refreshing.
Miyako Bijin Yoigokochi: A yuzu-sake designed by Yoigokochi Pure Sake, bringing you the ultimate balance between sweetness and acidity. Using the maximum amount of juice of this Japanese citrus fruit with its enchanting aroma, it is an intensely refreshing drink.
Kirei Shuz Kirei 92: The 'Kirei 92' is an exceptional sake crafted from rice only polished to 92% of its original size. It is the immense skill and attention to detail from Nishigaki-san that allows this sake to be so well balanced yet complex.
Kinoshita Shuz Tamagawa Yamahai: This limited edition of full-body yamahai sake was given an extra maturation at room temperature. Robust and pure taste and an enchanting rice aroma are the trademarks of Japan's only foreign master brewer. Slow-brew, unpasteurised, unfiltered and undiluted sake.
