Sophie Valancé and Jean-Yves Domont Les Vins Mont-Val is based in Aspiran (Herault) in the Languedoc. Sophie and Jean-Yves are farmers first, having spent several years in the Rhone, Beaujolais, Burgundy and Australia learning about biodynamic agriculture and growing wine. In 2019 the pair returned to France, settled in Aspiran and have since been recovering and caretaking plots of old vines which have not seen any synthetics (or, to be fair received much love of any kind) in decades.
TOA is a blend of Syrah, Carignan and Cabernet Sauvignon, about 60% whole cluster fermentation, 2.5 week maceration. Supple on the palate with notes of intense black fruits and a touch of florality, silky tannins and a long finish.
