A dry, organically and biodynamically farmed Prosecco from Fidora’s historic Civranetta estate on the Venetian mainland.
The vines grow in an ecological oasis protected by ancient trees, natural waterways and wild vegetation that has been farmed without chemicals for almost fifty years. This biodiversity and long term organic stewardship allow the Glera vines to root deeply into Caranto soil, the compact calcareous clay typical of the ancient Venetian lagoon, giving the wine its purity and subtle salinity.
Hand harvested grapes undergo a slow Charmat fermentation lasting at least eight weeks, creating a fine and persistent perlage.
