Pirouette is a Corbières red built on old vine Carignan (50%) with Mourvèdre (20%), Grenache (18%), and Syrah (12%), grown on a stony calcareous terrace of Riss origin with clay limestone and rolled pebbles. The site brings structure, spice, and deep Mediterranean aromatics. The vineyards are certified organic and HVE, with a strong focus on ecological stewardship and soil vitality.
The Syrah is destemmed and crushed, then given a 20-day temperature-controlled maceration with no added sulfites. Carignan, Grenache, and Mourvèdre ferment as whole berries, preserving freshness and aromatic lift. Each variety is vinified separately before blending.
Tasting Note: Ruby with violet highlights. Intense aromatics of black olive, fennel, and warm spice. The palate is concentrated yet silky, showing morello cherry, sandalwood, and black fruit with a long, sustained finish.
