Monte Tabor Ripasso is Fidora’s organic interpretation of the classic Valpolicella style that gains depth and complexity through the traditional ripasso process. The estate is one of Italy’s oldest certified organic wineries, farming without chemicals since 1974, with a focus on biodiversity, soil vitality and gentle cellar work.
The wine begins as a fresh Valpolicella made from organically farmed Corvina, Corvinone and Rondinella grown on the limestone rich hills of Valpolicella. After primary fermentation, the young wine is repassed over the dried Amarone pomace, triggering a second fermentation that adds richness, color, texture and aromatic intensity. Ageing follows in a combination of large Slavonian oak and French oak, building smooth structure without overt wood influence.
