Monte Tabor Amarone is crafted from organically farmed estate vineyards using the traditional appassimento method. Corvina, Corvinone, and Rondinella are hand harvested and dried for several months in ventilated fruttaio rooms, concentrating flavor and structure before a slow native yeast fermentation. The wine matures in a combination of large Slavonian oak and French oak, allowing the 2017 to gain aromatic complexity and polished texture while keeping wood influence in balance.
Tasting note
The 2017 vintage is generous and refined, with deep notes of black cherry, dried plum, cacao, baking spices and warm earth. The palate is full and velvety with smooth tannins, balanced sweetness, and a long finish layered with dried fruit, spice and gentle mineral accents.
