Cote de Bouilly was Jean-Paul Brun's first cru bottling - rigorously hand-sorted and de-stemmed, the grapes are then lightly pressed and left of skins for 3 weeks in concrete vats. Aged in vat for another 6-8 months before bottling.
Black fruit dominates, but under all that fruitiness some dense tannins and acidity help bring great structure. Can benefit from some aging, although delicious now.
