Lifted plum nose, blackberry and cedarwood spice. Forest margin and a hint of spruce indicating the cool climate heritage. Light extraction built around carbonic fermentation leaves the palate quite ethereal. What tannins are present mostly take their form from the stem material so theres a botanic thread here
This wine style is driven by a love of whole bunch ferment and more traditional older styles of winemaking. By using such high levels of whole bunch tannin is embraced and rewarded with an evolution of fruit, forest and spice aromas only possible when these techniques are employed.
