Fermentation is with wild yeasts followed by 18 months in barrel, approximately 20% of which are new (500L), bottled without fining or filtration. The wine shows a bright deep red\/garnet colour with black cherry, blackberry, and red currant aromas. On the palate there's a round, velvety texture backed by firm acidity. Flavours of violet, plum, and cherry with mint, bitter chocolate and earth.
