Les Graviers is one of Stéphane Tissot’s benchmark sites in Arbois, sourced from a 1.3-hectare biodynamically farmed parcels of classic Jurassic limestone with topsoils of gravel and marl in the north of the Jura. These soils are known to produce some of the most mineral-driven Chardonnay in the Jura. The vines were planted between 1952 and 2002 (massal selection). The domaine has been certified biodynamic for many years, and all fruit is hand harvested.

Elevage (ageing) is 12 months in French oak barriques, about 20% of which are new. Sulphur is kept low, and the wine is bottled without fining or heavy manipulation. 

Tasting note: vibrant and concentrated with lemon oil, pear skin, preserved citrus, crushed stone, and gentle hazelnut. The palate is tense and mineral with driving acidity, fine chalky texture, and a long, saline, tightly coiled finish.
