After hand-picking, the wine undergoes a natural fermentation with wild yeasts and is bottled before fermentation is finished to create Pet Nat’s signature single-fermentation fizz. The wine is disgorged after 10 months, and then bottled unfiltered, unfined, with minimal sulphites.\u003c\/p\u003e\n\u003cp\u003eIt is aromatic, laser-bright, with a little bit of sweetness – like lemonade for grown-ups.
