The vineyard faces southeast and sits 200m above sea level. \u003cspan\u003eThe grapes are hand-harvested, fermented with 100% whole bunches in open 1500L tanks, then pressed after 8 days and matured in old French oak barrels. SO2 was added a month before bottling. The wine is unfined and lightly filtered. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eNotes of tart black plums, violets, olive tapenade and black sour-cherries, with fine, silky tannins.
