Sicilian producer COS should need no introduction - but in case you're unfamiliar, three school friends Giambattista Cilia, Giusto Occhipinti and Giuseppina Strano are the founding father's of Azienda Agricola COS - the winery largely credited for spurring in the renisance of Sicilian wine. After founding the winery in the 80s - near the height of demand for big, over-extracted wines from Italy, the trio reverted to ancient methods in their viticulture and winemaking practices. Today their vineyard is farmed organically and biodynamically and their wines often fermented and aged in clay anfora. The result is pure and precise wines that are expressive of the Vittoria terroir.
