2020 Les Pierres Rousses - SOLD OUT

Made by Catherine & Pierre’s son Paul, the grapes are sorted carefully to avoid rot and whole-cluster pressed into second and third fill barriques for fermentation. They spend at least 10 months fermenting in barrel, but due to high acid and low cellar temp, no malolactic fermentation takes place. The wine is eventually lightly filtered and bottled dry.
