Shochu made from chestnuts.

Chestnuts make up an unusually high 50% of the raw ingredients, alongside barley, rice and rice koji. Slow, low-temperature single distillation helps preserve their delicate aroma.

Soft and aromatic, with fresh chestnut, peach and an air of confectionary sweetness. The palate is smooth and rounded, with gentle richness and a lingering chestnut character.

Dabada Hiburi is a honkaku shochu from Mutemuka, a historic distillery founded in 1893 near the headwaters of the Shimanto River in Kōchi. The recipe dates to the 1980s, when local farmers approached the distillery looking for a use for an excess of chestnuts. Hiburi, or “fire-swinging,” refers to a traditional nighttime fishing method on the Shimanto River using flaming torches.

Drink it neat or on the rocks, with soda for a highball, or oyuwari with hot water to bring out its chestnut aromas in colder weather.
