Pastis is anise-flavoured French spirit local to the south of France. At Distillerie Garagai, star anise, licorice root, and a variety of fresh, wild plants are cultivated around the Sainte-Victoire in Bouches-du-Rhône during spring 2022. Each plant is worked independently by infusion in hot water, maceration in a neutral alcohol base, and distillation using traditional stills over an open flame and in a bain-marie, before assembly in the fall. Butinarello Lavender honey is added to enhance the taste during the blending process.
The result is an assembly work that reveals the terroir and tells the story of the vintage.
How to enjoy pastis? No, please don't take shots of it. And no, we wouldn't recommend sipping on the straight liquor either.
Typically served as an aperitif, pastis is diluted with water, transforming its clear, amber hue into a refreshing, milky drink. It is as simple as combining 1 part pastis with 5 parts chilled water, and voilà! South of France in a glass.
