Les Équilibristes work with small growers across the Languedoc who farm organically and focus on biodiversity, soil vitality and minimal inputs. Their Picpoul comes from limestone rich soils near the Étang de Thau, the historic home of the grape, where maritime breezes preserve acidity and bring a natural saline lift.
Grapes were hand-harvested at night, and went through cold settling before a native and indigenous yeast fermentation. This cuveé aged on lees for 3 months and was bottled early to keep CO2 in the bottle which naturally protects the wine. Straw yellow in colour. Notes of tropical fruits on the nose, rich and supple on the palate with notes of honey and cloves.
