100% Pais. The grapes for Carrizal are produced by Ernesto Soto, a young producer who is the only farmer Louis-Antoine works with that is dedicated 100% to vine-growing. The grapes for this cuvee come from 100 to 150 year old bush vines of Pais. Spontaneuos fermentation takes place in large wooden lagares at the site where they were farmed. Lush dark fruit and lots of character.
