Farming organically and biodynamically since 1989, they harvest entirely by hand. After spontaneous fermentation with indigenous yeasts, the wine is aged in stainless steel using the ouillé method for 10 months on its fine lees. The absence of oak allows the vineyard's mineral character to remain front and centre.\u003c\/p\u003e\n\u003cp\u003eRipe pear, lemon curd, wet stone, smoky flint, and almond open into a generous yet finely sculpted palate.
