    Gonin Musume is made with Yukigesho and Miyamanishiki rice polished to 70%, grown without chemical fertilizers or pesticides.

    This cuvée marked Terada Honke’s transition toward traditional and natural sake production. It is made using a kimoto starter and spontaneous fermentation, relying on naturally occurring airborne yeast rather than cultured yeast strains. The sake is bottled without charcoal filtration, resulting in natural colour and light sediment from the rice.

    The name Gonin Musume, meaning “Five Girls,” was inspired by a visiting poet who remarked on the lively atmosphere of the brewery and dedicated the name to this sake.

    About Terada Honke
    Founded around 1675, Terada Honke is known for its traditional approach to sake production. The brewery does not use cultivated yeast, relying instead on naturally occurring yeast present within the brewery environment. All sake are produced using the kimoto method, with no added lactic acid in the starter culture.

    The brewery emphasizes manual production methods and uses organically grown rice throughout its range.
