William Downie is one of Australia's most respected Pinot Noir specialists, known for his meticulous vineyard work and small-production wines from Gippsland, Victoria. Cathedral is his more accessible project, bringing the same thoughtful approach to an everyday Pinot Noir at a more approachable price.

The 2025 vintage draws fruit from three cool-climate Victorian regions: King Valley (70%), Yarra Valley (20%) and Upper Goulburn (10%). The grapes are destemmed and fermented with native yeasts, with minimal extraction to preserve freshness and delicacy. Ageing takes place entirely in stainless steel, without oak.

Fragrant and supple, with wild strawberry, red cherry, blueberry and rose petals, alongside subtle dried herbs and earthy spice. Silky tannins and lively acidity make this an inviting Pinot Noir for the table, particularly with roast chicken, mushrooms or charcuterie.
