The History
For 4 generations, the Calabretta family has grown grapes according to the fabled, centuries old traditions of Mount Etna; minimizing vineyard treatments to copper sulphate, using green manure and being strict and diligent with their winter pruning.
Calabretta has earned a superstar-like reputation on the island of Sicily. Thanks to the volcanic soils of Etna, combined with the dramatic temperature differentiation between day and night and intense daytime sun yield grapes of incredible concentration and perfect ripeness from their 60–80 year-old un-grafted vines.
The Philosophy
Similar to in the vineyard, post a manual harvest Calabretta uses only the lightest touch in the cellar. Their cellar, just so happens to be dug into a cliffside, which helps to keep it cool and the humidity in check naturally. They ferment only with indigenous yeasts, and favour the use of old, large format Slovenian oak rather than anything new.
