Made from 100% organic bush vine Syrah planted in 2001 on the decomposed granite bedrock of Paardeberg. The vineyard faces southeast and sits 200m above sea level. The grapes are hand-harvested, fermented with 100% whole bunches in open 1500L tanks, then pressed after 8 days and matured in old French oak barrels. SO2 was added a month before bottling. The wine is unfined and lightly filtered.
Notes of tart black plums, violets, olive tapenade and black sour-cherries, with fine, silky tannins. Pure, powerful, and very elegant.
Fun fact: This wine used to be called “Redemption”. Since Craig and Carla Hawkins have now moved on from that period in their lives, they've renamed the wine "The Dark Side".
