The grapes come from limestone rich soils with pockets of clay that shape a wine driven by mineral tension.
The vineyards are organically farmed with a focus on biodiversity and soil health. Everything is hand worked and hand harvested in keeping with the domaine’s micro scale ethos. The goal is to preserve natural acidity and the aromatic brightness of the fruit.
In the cellar, whole clusters are used to encourage perfume and delicate tannin. The wine ferments naturally with native yeast and is aged in neutral oak and concrete. This brings clarity and finesse without adding weight. Sulphur is kept low and the wine is bottled unfined and unfiltered.
Tasting note: lively and juicy with red cherry, wild strawberry, pomegranate, and violet. The palate is silky and bright with crunchy fruit, soft tannin, and a gentle herbal lift from the whole cluster. A mineral spine carries the finish, keeping the wine refreshing, fragrant, and incredibly drinkable.
