AMI’s Bourgogne Aligote is sourced mainly from organically farmed parcels, where the vines sit on classic limestone rich soils with clay and marl that give the wine freshness, salinity, and a beautiful lift.
The vineyards are farmed organically with a strong focus on biodiversity and soil vitality. Vines are hand worked and grapes are hand harvested to protect the natural acidity and aromatic delicacy that Aligote is known for. Yields remain modest for clarity and precision.
In the cellar, the grapes are whole bunch pressed and naturally fermented in neutral oak barrels. The wine rests on fine lees through the winter, gaining mid palate texture without taking on overt wood influence. Sulphur is kept low and the wine is bottled unfined and unfiltered.
Tasting note: bright and vivid with notes of white peach, green apple, Meyer lemon, and crushed chalk. The palate carries a saline edge characteristic of high quality limestone grown Aligote, with gentle lees derived creaminess that never compromises freshness.
