Homard Bleu is made from organically farmed Pinot Noir grown on clay and loam soils in and around Pommard. Fruit is hand harvested and sourced from AMI’s own organic vineyards and from trusted organic growers across the Côte d’Or.
The grapes are largely whole cluster fermented with native yeast. Elevage takes place in neutral barrels to preserve purity and site expression. The wine is bottled unfined and unfiltered with only a minimal addition of sulphur.
Tasting note: bright red cherry, wild strawberry, and violet with subtle earth and mineral nuance. The palate is silky and fresh with fine tannins, lively acidity, and a clean mineral-forward finish.
