Homard d’Or comes from a north east facing Chardonnay parcel called Les Fas in Pommard, grown on classic marl over limestone. The domaine is in the midst of organic conversion and all fruit is hand harvested to preserve peak freshness.
The grapes are direct pressed, settled overnight, and fermented with native yeast in 5 to 7-year-old barrels. The wine ages for 12 months without racking or stirring. A light clay filtration is used and sulphur remains minimal at less than 25mg/L at racking. Bottled without fining.
Tasting note: lemon peel, white peach, crushed shell, and a subtle hazelnut nuance. The palate is silky and precise with bright acidity and a great salinity.
